One regenerated barrel. Several directions.
Using the same regeneration process, TEDEM adapts the finish to the product, the desired aromatic profile and the ageing program.
Three ways to prepare the next ageing cycle.
Regeneration is the foundation. The finish is then selected according to the desired impact: remain close to the fruit, provide an oenological direction or adjust the toasting profile.
Mineral Range
A restrained direction designed to limit added aromatic impact and give more space to the wine or spirit.
Tannin finishes
Oenological tannins introduced directly into the wood to guide the profile toward the desired objective.
Infrared
Precise, even toasting to adjust toast intensity or create a char-style finish.
Restraint as a deliberate choice.
This finish is designed for projects that primarily seek continuity of fruit, freshness and product identity.
It returns the barrel to ageing without imposing an additional oak profile. It is particularly suited to delicate wines or users who first want to assess the effect of regeneration itself.
- Controlled oak impact
- Product expression prioritised
- Suitable for comparative trials
- Available for wines and spirits after assessment

Give direction to the next ageing cycle.
TEDEM has developed a process for introducing oenological tannins into the wood. The finish is selected according to the product, desired structure and level of intensity.
The available profiles address different directions, including freshness, structure, sweetness and intensity. The choice is made with the cellar; there is no single standard recipe.
- FRESH: freshness, tension and aromatic brightness
- TANCOR: roundness, richness, toasted and buttery notes
- SWEET: vanilla, natural sweetness and biscuit notes
- INTENSE: structure, tannic power, mocha and roasted coffee
Adjust the toast with precision.
Infrared technology provides controlled, even heating. It can be applied after regeneration to redirect the cask’s aromatic profile.
Light toast
A subtle profile for delicate ageing programs.
Medium toast
Balance between roundness, toast and complexity.
Medium +
A more pronounced, structuring presence.
Heavy / Char
For intense profiles, particularly for spirits.

The product remains the starting point.
Red wines
Structure, roundness and intensity are adjusted according to wine style and ageing time.
White wines
A focus on precision and restraint for fresh, taut or delicate profiles.
Spirits
Possible direction toward heavier toasts or a char finish, depending on the type of spirit.
