Three ways to prepare the next ageing cycle.

Regeneration is the foundation. The finish is then selected according to the desired impact: remain close to the fruit, provide an oenological direction or adjust the toasting profile.

Restraint as a deliberate choice.

This finish is designed for projects that primarily seek continuity of fruit, freshness and product identity.

It returns the barrel to ageing without imposing an additional oak profile. It is particularly suited to delicate wines or users who first want to assess the effect of regeneration itself.

02 · Tannin finishes

Give direction to the next ageing cycle.

TEDEM has developed a process for introducing oenological tannins into the wood. The finish is selected according to the product, desired structure and level of intensity.

The available profiles address different directions, including freshness, structure, sweetness and intensity. The choice is made with the cellar; there is no single standard recipe.

  • FRESH: freshness, tension and aromatic brightness
  • TANCOR: roundness, richness, toasted and buttery notes
  • SWEET: vanilla, natural sweetness and biscuit notes
  • INTENSE: structure, tannic power, mocha and roasted coffee

Adjust the toast with precision.

Infrared technology provides controlled, even heating. It can be applied after regeneration to redirect the cask’s aromatic profile.
